Chicken and Marinade

  • 1 1/2 pounds boneless skinless chicken thighs

  • 1 teaspoon ancho chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • 1 lime, juiced

  • Rice, for serving (about 3 cups cooked)
  • Black beans, for serving (1 1/2 cups cooked or canned, drained and rinsed)
  • Shredded lettuce, for serving (about 2 cups)
  • Avocado, sliced, for serving (1 medium avocado)
  • Salsa, for serving (1/2 cup or to taste)


Instructions

  1. Prepare the marinade: In a large bowl, combine boneless skinless chicken thighs with kosher salt, black pepper, minced garlic, chipotle peppers in adobo sauce, ancho chile powder, ground cumin, dried oregano, and olive oil. Toss well until the chicken is fully coated with the seasonings.
  2. Preheat the air fryer: Place the crisper plate into the COSORI air fryer basket. Select the preheat function and set the temperature to 385 degrees Fahrenheit. Tap start/pause to begin preheating.
  3. Air fry the chicken: Once preheated, place the seasoned chicken thighs evenly onto the crisper plate inside the air fryer basket. Select the air fryer function, set the time for 16 minutes, and tap start/pause to cook. Flip halfway if your air fryer instructions suggest for even cooking.
  4. Rest and slice the chicken: After cooking, remove the chicken thighs from the air fryer. Immediately squeeze the juice of 1 lime over the hot chicken to enhance flavor. Allow the chicken to rest for 5 minutes to retain juices. Then slice the chicken into bite-sized pieces.
  5. Assemble the burrito bowls: In serving bowls, layer cooked rice as the base, add black beans, shredded lettuce, sliced avocado, and spoonfuls of salsa. Top each bowl generously with the sliced chipotle lime chicken. Serve immediately and enjoy!
