Description

This Best Air Fryer Filet Mignon recipe delivers melt-in-your-mouth tender steaks with a perfect sear and infused with flavorful garlic herb butter. Using an air fryer, it’s a quick and easy way to enjoy a gourmet steak dinner at home, featuring a juicy, medium-rare finish that can be adjusted to your liking.

Ingredients

Scale

Filet Mignon

  • 2 filet mignon steaks, about 8 oz each
  • 1 Tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper

Garlic Herb Butter

  • 2 Tablespoons unsalted butter, softened
  • 1 teaspoon fresh parsley, diced
  • 1 teaspoon fresh thyme, diced
  • 1 teaspoon fresh rosemary, diced
  • 1 clove garlic, minced

Instructions

  1. Bring Steaks to Room Temperature: Remove the steaks from the refrigerator 30 minutes before cooking to allow the meat to come to room temperature, ensuring even cooking.
  2. Prepare Garlic Herb Butter: In a small bowl, combine the softened butter with diced parsley, thyme, rosemary, and minced garlic. Mix well and place the butter in the refrigerator to harden while preparing the steaks.
  3. Season the Steaks: Pat the steaks dry thoroughly with paper towels. Rub olive oil evenly over both sides of each steak. Season both sides with fine sea salt and ground black pepper.
  4. Preheat Air Fryer: Set the air fryer to 400°F and allow it to preheat fully before cooking the steaks.
  5. Cook Steaks in Air Fryer: Place the filet mignon steaks into the air fryer basket without overcrowding. Cook for 10-11 minutes for medium-rare, flipping the steaks halfway through the cooking time. Use an instant-read meat thermometer to check for an internal temperature of 130°F for medium-rare.
  6. Rest and Add Herb Butter: Once cooked, transfer the steaks to a serving plate. Top each steak with half of the herb and garlic butter. Loosely cover with aluminum foil and let them rest for 10 minutes. Resting allows juices to redistribute and the butter to melt perfectly into the steak.

Notes

  • A 7-ounce filet mignon will take about 10 minutes for medium-rare, while a 10-ounce filet will require about 13 minutes.
  • For different levels of doneness on an 8-ounce steak: rare (9-10 minutes, 120°F initial temp), medium-rare (10-11 minutes, 130°F), medium (11-12 minutes, 140°F), medium-well (12-13 minutes, 150°F), and well done (13-14 minutes, 160°F). Rest time is always 10 minutes.
  • Cook steaks in batches if preparing more than two to avoid overcrowding and ensure proper browning.
  • Store leftover cooked steak in an airtight container in the refrigerator up to 3 days. Garlic herb butter can be stored separately in the refrigerator for up to 1 week.
  • To reheat, preheat the air fryer to 350°F and warm the steak for 3-4 minutes. Avoid overcooking.
