- 1/2 tsp salt
- 1/4 tsp pepper
Egg Wash
- 2 large eggs
- 1 tbsp water
Breadcrumb Coating
- 1/2 cup Italian breadcrumbs or panko bread crumbs
- 1/3 cup parmesan cheese, finely grated
Other
- Cooking spray
Instructions
- Prepare Zucchini: Slice the zucchini into 3-inch sticks resembling french fries. Set aside.
- Mix Flour Coating: In a large bowl, combine the all-purpose flour, Italian seasoning, salt, and pepper evenly.
- Make Egg Wash: In a separate medium bowl, whisk together the eggs and water until the mixture is pale yellow and smooth.
- Prepare Breadcrumb Mixture: In another bowl, combine the breadcrumbs and grated parmesan cheese by stirring well.
- Coat Zucchini: Toss the zucchini sticks in the flour mixture, shaking off any excess flour. Then dip each stick into the egg wash, ensuring full coverage.
- Bread the Zucchini: Next, roll the dipped zucchini sticks in the breadcrumb and parmesan mixture, coating thoroughly. Repeat for all pieces.
- Air Fry the Fries: Preheat your air fryer to 385°F. Lightly spray the bottom of the air fryer basket with cooking spray. Place the coated zucchini fries in a single even layer without touching. Spray the tops lightly with cooking spray.
- Cook: Air fry at 385°F for 10 minutes until golden brown and crisp. Serve immediately with your favorite dipping sauce if desired.
Notes
- FREEZING: Avoid freezing zucchini fries due to their high water content which causes sogginess when thawed.
- BAKING ALTERNATIVE: For baking, place a cooling rack on a baking sheet to elevate fries allowing air circulation. Spray with olive oil and bake at 425°F for 22 minutes until golden and crispy.
