Description

Delicious and easy-to-make Buffalo Chicken Pinwheels that combine shredded chicken with creamy buffalo sauce and melted mozzarella, all wrapped in flaky puff pastry. Perfect as an appetizer for parties and gatherings.

Ingredients

Scale

Filling

  • 2 cups cooked and shredded chicken
  • 2 oz cream cheese softened
  • 1/2 cup plain Greek yogurt
  • 1/2 cup buffalo sauce
  • 1/2 cup shredded mozzarella cheese
  • 3 scallions chopped
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Pastry

  • 2 sheets thawed puff pastry
  • 1 egg beaten

Instructions

  1. Preheat Oven: Preheat the oven to 400°F and line a large baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Mix Filling: In a mixing bowl, combine the cooked and shredded chicken, softened cream cheese, plain Greek yogurt, shredded mozzarella cheese, buffalo sauce, chopped scallions, garlic powder, salt, and black pepper. Mix everything well with a rubber spatula until fully incorporated.
  3. Prepare Puff Pastry: Unfold one sheet of puff pastry on a floured cutting board. Roll the puff pastry slightly thinner using a rolling pin to create an even thickness.
  4. Spread Filling: Spread half of the buffalo chicken mixture evenly over the puff pastry sheet, making sure to reach the edges on all sides.
  5. Roll and Slice: With the short edge facing you, carefully roll the puff pastry up away from you into a tight log. Using a sharp knife, slice the roll into eight equal pieces. Repeat this process with the second sheet of pastry and remaining filling.
  6. Arrange and Brush: Place the pinwheels on the prepared baking sheet, spacing them at least two inches apart. Brush the tops and sides of each pinwheel with the beaten egg to promote browning.
  7. Bake: Bake in the preheated oven for 25 minutes or until the pinwheels are puffed up and golden brown.
  8. Cool and Serve: Allow the pinwheels to cool for 5 minutes before transferring to a serving plate. Optionally, garnish with additional chopped scallions or cilantro before serving.

Notes

  • Make sure the puff pastry is well thawed before rolling to prevent cracking.
  • You can substitute plain Greek yogurt with sour cream for a richer texture.
  • Adjust the amount of buffalo sauce according to your desired spice level.
  • If you prefer a crispier bottom, bake on a preheated baking stone or metal sheet.
  • Leftover pinwheels can be reheated in the oven to retain crispiness rather than a microwave.
