Instructions
- Cream Butter and Sugars: In a large mixing bowl, cream together softened butter, brown sugar, and sugar for 4 minutes or until the mixture is light and fluffy.
- Add Peanut Butter, Egg, and Vanilla: Beat in the creamy peanut butter, large egg, and vanilla extract for 1 minute until well combined.
- Combine Dry Ingredients: Fold in the rolled oats, flour, baking soda, and salt. Stir just until the dry ingredients are incorporated into the wet mixture.
- Mix in Chocolate Chips and M&M's: Gently fold in the chocolate chips and 3/4 cup of red and green holiday M&M's, reserving 1/4 cup to add later.
- Chill Dough: Tightly wrap the cookie dough and chill in the refrigerator for 30 minutes to firm up.
- Preheat Oven: Once chilled, preheat the oven to 365 degrees Fahrenheit.
- Scoop Dough onto Baking Sheet: Using a spoon or cookie scoop, place dough onto a light-colored baking sheet, spacing the cookies at least two inches apart.
- Bake Cookies: Bake the cookies in the preheated oven for 10 minutes until edges are set and tops look slightly cracked.
- Add Remaining M&M's: Immediately after removing from the oven, lightly press the reserved 1/4 cup of M&M's onto the tops of the cookies for decoration.
