Description

  • 200 g dark chocolate
  • 4 medium eggs
  • 275 g caster sugar

Instructions

  1. Preheat Oven: Preheat your oven to 180C/160C Fan and line a 9-inch square baking tray with parchment paper to prepare for baking the brownies.
  2. Melt Chocolate and Butter: Melt together the 200 g unsalted butter and 200 g dark chocolate in a heatproof bowl over a pan of boiling water or in the microwave for 1-2 minutes until melted. Leave to cool to room temperature.
  3. Whisk Eggs and Sugar: Using an electric whisk or stand mixer, whisk 4 medium eggs and 275 g caster sugar for a few minutes until the mixture turns pale, thick, and mousse-like, doubling in volume.
  4. Combine Chocolate and Egg Mixture: Pour the cooled chocolate mixture over the whisked eggs and sugar, folding carefully to combine without knocking out the air.
  5. Add Dry Ingredients: Sift 50 g cocoa powder and 100 g plain flour over the mixture and gently fold again to maintain airiness.
  6. Fold in Chocolate Chips: Fold through 100 g milk chocolate chips and 100 g white chocolate chips evenly into the batter.
  7. Bake: Pour the batter into the prepared tray and bake in the oven for 30 minutes. After baking, cool completely in the tin.
  8. Cut and Assemble: Once cooled, cut the brownies into tree shapes by halving the tray and then cutting the halves into triangles. Insert the straight parts of the candy canes into the base of each brownie to serve as tree trunks.
  9. Prepare Buttercream: Cream together 100 g unsalted butter and 200 g icing sugar until smooth. Add green food colouring until desired green shade is achieved.
  10. Decorate: Transfer the green buttercream to a piping bag fitted with a 2D closed star tip and pipe zigzag lines on each brownie tree. Add sprinkles, sweets, and a yellow star candy (such as an M&M) on top for festive decoration. Enjoy!
