Ingredients
Scale
Vegetables
- 1 lb. fresh green beans, trimmed
- 1 ½ lbs. baby Yukon gold potatoes, cut in half
Meat and Dairy
- 12 oz thick cut bacon
- 4 tbsp butter
Seasonings
- 2 ½ tbsp ranch seasoning
- 1 tsp garlic powder
- salt, to taste
- black pepper, to taste
Instructions
- Boil Green Beans: Bring a medium pot of water to a boil, add the green beans, and cook until bright green and tender, about 5 minutes. Remove with a slotted spoon and immediately place them in a bowl of ice water to stop the cooking process.
- Cook Potatoes: After removing the green beans, add the Yukon gold potatoes to the boiling water and cook until fork tender, about 10 minutes. Drain carefully.
- Cook Bacon: While potatoes cook, heat a large skillet over medium-high heat and cook bacon pieces until browned and crispy. Remove bacon with a slotted spoon and place on a paper towel-lined plate to drain excess fat; set aside.
- Brown Potatoes: Add the drained potatoes to the skillet with the reserved bacon drippings. Stir frequently, cooking until potatoes are browned on all sides.
- Add Remaining Ingredients: Reduce heat to medium. Add butter, drained green beans, ranch seasoning, and garlic powder to the skillet. Stir to coat everything evenly.
- Combine and Season: Add the cooked bacon back into the skillet. Stir well and season with salt and pepper to taste. Serve warm and enjoy.
Notes
- Use baby Yukon gold potatoes for quicker cooking and great texture.
- Ranch seasoning can be substituted with homemade mix of dried herbs, onion powder, and dried buttermilk powder if preferred.
- Soaking green beans in ice water after boiling helps maintain their bright color and crisp texture.
- For a vegetarian version, omit bacon and use olive oil instead of bacon drippings.
- Ensure potatoes are cut evenly for uniform cooking.
