Instructions
- Infuse the Milk: Add sliced green onions to the whole milk and heat gently over low heat until it just reaches a boil. Remove from heat and allow the green onions to steep in the milk to infuse their flavor.
- Cook the Potatoes: Peel and quarter the potatoes, then boil them in salted water until they become very tender, about 15 minutes. Drain the potatoes well and let them steam dry for 2-3 minutes to remove excess moisture.
- Mash the Potatoes: Pour the hot infused milk through a sieve to remove green onions, reserving the milk, and add it gradually to the potatoes while mashing with a potato masher or ricer until smooth and creamy.
- Add Butter and Seasoning: Incorporate the unsalted butter into the mashed potatoes, stirring until melted and combined. Season with salt and white pepper to taste for a balanced flavor.
- Serve: Spoon the Champ into a serving bowl, and for extra flavor and presentation, sprinkle some finely sliced green onions on top and add a knob of melted butter.

- Use starchy or floury potatoes such as Yukon Gold, Russet, Maris Piper, King Edward, Vivaldi, or Desiree for best texture.
