Breading mixture

  • 1 1/2 cups plain breadcrumbs
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon celery seed
  • 1/3 cup freshly grated Parmesan cheese
  • 1/3 cup mayonnaise

Garnish

Instructions

  1. Prepare: Preheat oven to 425 degrees Fahrenheit and line a rimmed baking sheet with aluminum foil or parchment paper. Set aside.
  2. Season pork: Dry pork chops well with paper towels and season lightly with salt and pepper to taste.
  3. Make breading mixture: In a shallow bowl, combine breadcrumbs, kosher salt, smoked paprika, black pepper, garlic powder, onion powder, celery seed, and Parmesan cheese. Stir well to combine.
  4. Bread pork chops: Spread a thin layer of mayonnaise on one side of a pork chop and press the mayo side down into the breadcrumb mixture, coating it well. Spread another thin layer of mayonnaise on the other side and sprinkle with breadcrumb mixture, pressing gently to adhere. Place the breaded pork chop on the prepared baking sheet. Repeat with remaining pork chops.
  5. Bake: Spray the tops of the pork chops lightly with cooking spray. Bake in the preheated oven for 20 minutes or until pork reaches an internal temperature of 145 degrees Fahrenheit.
  6. Serve: Let pork chops rest a few minutes after baking. Serve sprinkled with fresh minced parsley and lemon wedges on the side.

  • For pan-fried pork chops, use vegetable or peanut oil about 1/4 inch deep in a heavy skillet over medium to medium-high heat; fry for 5-6 minutes per side until 140-145°F internal temperature.
  • To air fry, preheat the air fryer to 400°F, spray basket and pork chops lightly with cooking spray, cook for 6 minutes, flip, then cook another 6 minutes until 140-145°F internal temperature is reached.
