Instructions
- Prepare the pan: In a small fry pan or skillet, add a spray of cooking oil and crumble the feta cheese evenly, making sure to cover the outside circle of the pan as well.
- Sauté the feta: Cook the feta over medium heat for a couple of minutes until it starts to sizzle and melt without burning, creating a golden-brown crust around the edges.
- Add the egg: Gently crack the egg into the center of the pan over the melted feta. Season with dried oregano and red pepper flakes.
- Cook the egg: Allow the egg to cook to your preferred doneness, whether that is with a runny yolk or medium cooked.
- Prepare the base: Warm the tortilla on a gas stove, oven, or microwave. Smash the avocado on top and add a squeeze of lemon juice for freshness.
