Description

A simple and flavorful recipe for Crispy Feta Fried Eggs served on a warm tortilla with smashed avocado, pickled onions, and chili oil for a delicious breakfast or brunch.

Ingredients

Scale

Main Ingredients

  • 1 large egg
  • ¾ oz / 20g feta cheese
  • 1 small tortilla or slice of toasted bread
  • ¼ avocado

Seasonings and Garnish

  • Dried oregano
  • Red pepper flakes
  • Cooking oil spray or olive oil spray
  • Lemon juice
  • Pickled onions (for garnish)
  • Chili oil (for garnish)

Instructions

  1. Prepare the pan: In a small fry pan or skillet, add a spray of cooking oil and crumble the feta cheese evenly, making sure to cover the outside circle of the pan as well.
  2. Sauté the feta: Cook the feta over medium heat for a couple of minutes until it starts to sizzle and melt without burning, creating a golden-brown crust around the edges.
  3. Add the egg: Gently crack the egg into the center of the pan over the melted feta. Season with dried oregano and red pepper flakes.
  4. Cook the egg: Allow the egg to cook to your preferred doneness, whether that is with a runny yolk or medium cooked.
  5. Prepare the base: Warm the tortilla on a gas stove, oven, or microwave. Smash the avocado on top and add a squeeze of lemon juice for freshness.
  6. Assemble the dish: Once the egg is cooked and the feta has formed a crispy crust, carefully remove it from the pan using a spatula and place it on top of the tortilla with avocado.
  7. Add garnishes: Top with pickled onions and drizzle chili oil over the egg. Serve immediately and enjoy your Crispy Feta Fried Eggs!

Notes

  • Use a non-stick pan to avoid the feta and egg sticking to the pan.
  • You can substitute the tortilla with toasted bread or a gluten-free wrap for variation or dietary needs.
  • If you prefer, omit the chili oil or use hot sauce as an alternative for spice.
  • Pickled onions add a tangy crunch; if unavailable, consider using fresh red onion slices or omit altogether.
  • Control the cooking time of the egg to get your preferred yolk consistency.
