Instructions

  1. Preheat and Prepare Baking Sheets: Preheat your oven to 450 degrees Fahrenheit and line one or two baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Seasonings: In a small bowl, combine kosher salt, paprika, garlic powder, and black pepper to create a flavorful seasoning blend for the potatoes.
  3. Coat Potatoes: Place the sliced potato rounds in a large bowl, drizzle with extra virgin olive oil and sprinkle the seasoning mixture over them. Stir well to ensure the potatoes are evenly coated with oil and spices.
  4. Arrange and Bake Potatoes: Spread the seasoned potato slices out in a single layer on the prepared baking sheets without overlapping to allow even cooking. Bake in the preheated oven for 20 minutes.
  5. Flip and Continue Baking: Carefully flip the potato slices over and bake for an additional 9 minutes, or until the potatoes are golden brown and crispy on both sides.
  6. Combine and Add Cheese and Bacon: Remove the baked potatoes from the oven and transfer all potato slices onto one baking sheet. Evenly sprinkle shredded cheddar cheese and crumbled bacon over the top.

  • To make this recipe in an air fryer, season the potato rounds as directed, place them in the air fryer basket (working in batches if needed), and air fry at 360 degrees Fahrenheit for 15 minutes, flipping every 5 minutes until crispy.
