Garlic Parmesan Butter

  • 1 pound salted butter, softened
  • 5 cloves garlic, grated
  • ½ cup finely grated parmesan cheese
  • 1 lemon, zest and juice
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • ¼ cup fresh parsley, finely chopped, optional, for serving

Chicken Skewers

  • 3 pounds boneless, skinless chicken thighs, cut into 2-inch strips
  • 2 teaspoons salt
  • ½ teaspoon black pepper


Instructions

  1. Prepare the garlic parmesan butter: Melt the butter in a medium-sized bowl, then add the grated garlic, parmesan cheese, lemon zest, lemon juice, salt, and red pepper flakes. Stir to combine. Note that the butter sauce may firm up if left to rest.
  2. Trim the skewers: Trim the wooden skewers to fit your air fryer using poultry shears or appropriate scissors for clean cuts.
  3. Assemble the chicken skewers: Thread 6-7 pieces of boneless chicken thigh onto each wooden skewer tightly. Repeat for all chicken strips. Season the skewers evenly with salt and black pepper.
  4. Brush with butter and air fry: Using a basting brush, coat all sides of each chicken skewer generously with the garlic parmesan butter.
  5. Cook the skewers: Place the skewers in the air fryer at 350°F. Cook for 5 minutes, then baste again with more butter sauce, cook for another 5 minutes, baste once more, and cook a final 5 minutes, totaling 15 minutes of cooking. Chicken should be golden brown and cooked through.
  6. Finish and serve: Once all skewers are cooked, pour the leftover garlic parmesan butter found at the bottom of the air fryer over the cooked chicken. Garnish with freshly chopped parsley and additional parmesan if desired. Serve with lemon wedges and enjoy!
