Description

This Easy Bruschetta Chicken recipe features tender, seasoned chicken breasts grilled to perfection, topped with a fresh and vibrant tomato basil topping and a slice of melted mozzarella cheese. Finished with a drizzle of balsamic glaze, this dish combines classic bruschetta flavors with juicy grilled chicken for a delicious and simple main course.

Ingredients

Units Scale

Tomato Basil Topping

  • 2 cups diced Roma tomatoes (260g)
  • 1 head garlic (minced)
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 5 tablespoons fresh chopped basil (9g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare Tomato Basil Topping: In a medium sized bowl, combine the diced Roma tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir everything together until well mixed, then set aside to let the flavors meld.
  2. Prepare Chicken: Take the chicken breasts and optionally pound them to even thickness for uniform cooking, or leave them as they are. Coat each breast evenly with 1 tablespoon of olive oil.
  3. Season Chicken: In a small bowl, mix the Italian seasoning, garlic powder, salt, and black pepper. Sprinkle and rub this seasoning blend evenly over all sides of the chicken breasts.
  4. Grill Chicken: Heat the grill to high heat. Place the seasoned chicken breasts on the grill and cook for 8 minutes per side or until the internal temperature reaches 165°F and the chicken is cooked through completely.
  5. Add Cheese: When the chicken is almost done, top each chicken breast with a slice of mozzarella cheese. Close the grill lid and allow the cheese to melt slightly, about 1-2 minutes.
  6. Rest and Serve: Remove the chicken from the grill and let it rest for about 5 minutes to retain juices. Then, top each piece with the prepared tomato basil topping and drizzle 1 tablespoon of balsamic glaze over each serving. Serve immediately.

Notes

  • You can pound the chicken breasts to an even thickness for quicker and more even cooking.
  • If you don't have a grill, you can use a grill pan or bake the chicken in the oven at 400°F for about 20-25 minutes.
  • Allowing the chicken to rest after grilling helps keep it juicy and tender.
  • Use fresh mozzarella for the best melt and flavor.
  • Balsamic glaze can be substituted with a balsamic reduction if not available.
