- 4 mild or spicy Italian sausages
Vegetables
- 1 red bell pepper thinly sliced
- 1 yellow bell pepper thinly sliced
- 1 yellow onion thinly sliced
- 1 tablespoon olive oil
- Salt & ground black pepper to season

- ½ cup marinara sauce or your favorite store bought sauce
- ½ cup shredded mozzarella cheese
- 4 buns or rolls of choice
- Fresh basil for garnish if desired
Instructions
- Preheat the grill: Heat your grill to medium heat, preparing it for cooking the sausages and vegetables.
- Prepare the vegetables: In a medium bowl, combine the sliced red and yellow bell peppers and yellow onion. Toss them with 1 tablespoon olive oil, ½ teaspoon salt, and ½ teaspoon ground black pepper. Set aside.
- Grill the sausages: Place the Italian sausages directly on the grill grates. Cook for 5-7 minutes per side, turning until fully cooked through. After cooking, transfer sausages to a dish and tent with foil to keep warm or keep them on a grill rack over indirect heat.
- Grill the vegetables: While sausages cook, place the prepared veggies in a grill basket over medium heat. Grill for 7-10 minutes, tossing frequently until the vegetables soften and develop a nice char.
- Assemble the rolls: Place one sausage in each bun or roll. Top with a generous helping of grilled peppers and onions, then spoon 2 tablespoons of marinara sauce over each. Sprinkle with shredded mozzarella cheese.
- Melt the cheese: Place the assembled sandwiches on the grill over indirect medium-high heat for 1-2 minutes to melt the cheese. Alternatively, use a broiler for 1-2 minutes until the cheese is bubbly and melted.
- Garnish and serve: Add fresh basil leaves on top if desired, then serve the sandwiches warm for a delicious meal.
Notes
- You can use either mild or spicy Italian sausages depending on your heat preference.
- If you don’t have a grill basket, use foil to create a tray for the vegetables to prevent them from falling through the grates.
- For a quicker cook, pre-cook the sausages in a pan and finish them on the grill for flavor.
- The marinara sauce can be substituted with your favorite pizza or pasta sauce.
- To keep the buns from getting soggy, lightly toast them on the grill before assembling.
- Fresh basil adds a nice aromatic touch but is optional.
