Ingredients
Scale
Fruit
- 2 ripe peaches
- 2 ripe nectarines
Other
- 1 tablespoon canola oil
- 8 large scoops vanilla ice cream
- Honey for drizzling
- Flaky sea salt for sprinkling
Instructions
- Prepare the Grill: Heat the grill to medium high heat, ensuring it is hot enough to create nice grill marks on the fruit.
- Brush Fruit: Lightly brush the peach and nectarine halves with canola oil to prevent sticking and help caramelization.
- Grill Fruit: Place the fruit halves on the grill cut-side down. Grill for about 3-4 minutes total, rotating 90 degrees midway to create crosshatch grill marks and allow the fruit to caramelize and soften slightly.
- Serve: Remove the grilled fruit carefully with tongs and place on serving plates. Add a scoop of vanilla ice cream in the center of each fruit half.
- Finish: Drizzle honey over the grilled peaches and nectarines and sprinkle with flaky sea salt to enhance the flavors. Serve immediately.
Notes
- Choose peaches that are just ripe—firm yet juicy—to hold up well on the grill without becoming mushy.
- Canola oil works well for grilling due to its high smoke point, but other neutral oils can be substituted.
- For extra flavor, consider adding a dash of cinnamon or a splash of balsamic vinegar before grilling.
- Grilled peaches can be prepped ahead of time and quickly reheated on the grill just before serving.
- If you don’t have a grill, a grill pan on the stovetop can be used as an alternative method.
