Scale
Main Ingredients
- 13 ounces Alouette Garlic & Herbs Soft Spreadable Cheese (or herbed cream cheese or herbed goat cheese)
- ⅓ cup roasted pistachios, finely chopped
- ½ cup dried cranberries, finely chopped
Optional Garnish
- Rosemary sprigs for garnish
Instructions
- Prepare the Cheese Balls: Line a large plate with parchment paper. Use a 1-ounce cookie scoop (2 tablespoons) to scoop out balls of cheese and place them on the parchment. Repeat until all the cheese is scooped. Place the plate in the freezer for 20 minutes to firm up the cheese balls, making them easier to roll.
- Prepare Coatings: While the cheese balls are chilling, place the chopped pistachios and chopped dried cranberries on two separate small plates or shallow bowls for coating.
- Roll and Coat: Remove the cheese balls from the freezer. Using your hands, roll each scoop into a smooth, round ball. Roll half of the cheese balls in the chopped pistachios and the other half in the chopped dried cranberries until fully coated.
- Serve: Arrange the coated truffles on a serving platter. Optionally, decorate the platter with rosemary sprigs around the rim for a festive touch. Serve immediately or refrigerate until ready to serve.
Notes
- Store truffles well-covered in the refrigerator for up to 3 days.
- To make nut-free, roll all the truffles in dried cranberries or consider alternative toppings like finely chopped seeds or herbs.
- For a dairy-free or vegan option, use your favorite spreadable dairy-free or vegan cheese that is firm enough to scoop and roll.
