Marinade
- 1 tbsp vegetable oil

Skewers
- 2 chicken breasts (approx 350g) chopped into bite sized pieces
- 1 red bell pepper chopped into large chunks
- 1 onion peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro roughly torn
Instructions
- Prepare the marinade: In a small bowl, mix together 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves minced garlic, 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey until well combined.
- Marinate the chicken: Place the chopped chicken breasts into a bowl and pour in three-quarters of the marinade. Cover the bowl and refrigerate for 1 hour to allow the flavors to infuse.
- Prep the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers do not require soaking.
- Thread the skewers: Alternate pieces of marinated chicken with chunks of red bell pepper and slices of onion on each skewer until all ingredients are used. Discard any leftover marinade in the bowl.
- Heat the grill or griddle: Preheat your BBQ or griddle to a high temperature to ensure a nice sear on the chicken.
- Cook the skewers: Place the skewers on the hot grill or griddle. Cook for 8-10 minutes, turning 3-4 times to ensure even cooking. Halfway through cooking, brush the skewers with the reserved marinade to enhance flavor and moisture.
- Check doneness: Slice open the largest piece of chicken to ensure there is no pink inside, indicating it is fully cooked.
- Finish and serve: Sprinkle cooked skewers with 1 tbsp sesame seeds and roughly torn coriander/cilantro. Serve hot with salad and your choice of rice or potatoes.
