Skewers

  • 2 chicken breasts (approx 350g) chopped into bite sized pieces
  • 1 red bell pepper chopped into large chunks
  • 1 onion peeled and sliced into squares
  • 1 tbsp sesame seeds
  • small bunch of coriander/cilantro roughly torn


Instructions

  1. Prepare the marinade: In a small bowl, mix together 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves minced garlic, 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey until well combined.
  2. Marinate the chicken: Place the chopped chicken breasts into a bowl and pour in three-quarters of the marinade. Cover the bowl and refrigerate for 1 hour to allow the flavors to infuse.
  3. Prep the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers do not require soaking.
  4. Thread the skewers: Alternate pieces of marinated chicken with chunks of red bell pepper and slices of onion on each skewer until all ingredients are used. Discard any leftover marinade in the bowl.
  5. Heat the grill or griddle: Preheat your BBQ or griddle to a high temperature to ensure a nice sear on the chicken.
  6. Cook the skewers: Place the skewers on the hot grill or griddle. Cook for 8-10 minutes, turning 3-4 times to ensure even cooking. Halfway through cooking, brush the skewers with the reserved marinade to enhance flavor and moisture.
  7. Check doneness: Slice open the largest piece of chicken to ensure there is no pink inside, indicating it is fully cooked.
