Instructions

  2. Toss with Glaze: In a mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss thoroughly until all the carrots are well coated with the glaze.
  3. Roast Carrots: Spread the glazed carrots evenly on a heavy-duty sheet pan to prevent warping. Roast in a preheated oven at 425°F (220°C) for 25 minutes, tossing the carrots halfway through the cooking time. For extra caramelization, broil for an additional 2 to 3 minutes after roasting.
  4. Serve and Garnish: Transfer the roasted carrots to a serving dish and garnish with chopped parsley, thyme, or your choice of fresh herbs if desired. Serve warm.
