Turkey and Seasoning

  • 7 lb bone-in skin-on turkey breast
  • 3 Tablespoons olive oil
  • ¾ teaspoon paprika
  • 2 teaspoon chopped poultry fresh herb mix (rosemary, sage, and thyme)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instant Pot Base

  • 2 cups chicken broth
  • 1 medium onion, chopped into large slices
  • 4 garlic cloves
  • 2 celery stalks

Gravy Thickener

  • 2 tablespoons cornstarch
  • ¼ cup cold water


Instructions

  1. Prepare Instant Pot Base: Add chicken broth to Instant Pot insert. Place trivet inside and arrange onions, garlic, and celery evenly.
  2. Make Seasoning Mixture: In a small bowl or measuring cup, combine olive oil, paprika, fresh herb mix, salt, and pepper until well mixed.
  3. Prepare Turkey Breast: Wash the turkey breast and remove the gravy pocket if present. Pat dry thoroughly. Brush the turkey breast evenly with the olive oil and herb mixture. Place the turkey breast breast side up on the trivet inside the Instant Pot.
  4. Set Instant Pot Cooking: Secure the Instant Pot lid and set the valve to sealing. Press the manual or pressure cook button and set the timer to 35 minutes on high pressure.
  5. Release Pressure Safely: When the cooking time ends and the Instant Pot beeps, press cancel/off and allow the pressure to release naturally, ensuring that the turkey remains juicy.
  6. Remove Turkey: Carefully open the lid away from your face. Using a large fork, remove the turkey from the pot and place it on a cutting board, serving platter, or a baking pan if you wish to crisp the skin further.
  7. Crisp Skin (Optional): Preheat your oven broiler to 440 ℉. Place the cooked turkey breast on the baking pan under the broiler. Broil until the skin turns golden and crispy, watching closely and rotating the pan as needed to prevent burning.
  8. Make Gravy: Strain the cooking liquid through a sieve into a container, pressing gently to extract maximum flavor from the onions and garlic. Measure out two cups of this liquid and return it to the Instant Pot insert. Mix cornstarch with cold water, then whisk it into the liquid. Use the sauté function and stir continuously until the gravy thickens.

  • Cook time does not include the time for the Instant Pot to reach pressure.
  • The 35-minute cook time is ideal for a 7 lb turkey breast; check internal temperature with a digital thermometer ensuring it reaches at least 165 ℉ in the thickest part.
