Description

  • 1/3 cup coconut rum (Malibu Original recommended)
  • 1/2 cup lemon-lime soda
  • 1/8 cup fresh lime juice
  • 1/8 cup simple syrup

  • Fresh pineapple skewer
  • Ice cubes


Instructions

  1. Combine Ingredients: In a cocktail shaker or large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well to combine all the ingredients thoroughly.
  2. Prepare Glasses: Fill two 12 oz. low-ball cocktail glasses three-quarters full with ice cubes to chill and prepare them for serving.
  3. Serve Punch: Pour half of the cocktail mixture (approximately 1 cup each) over the ice in each glass.
  4. Garnish: Add a skewer of fresh pineapple pieces to each glass for an appealing presentation and extra flavor.

Notes

  • You can store any leftover punch in the refrigerator for up to 24 hours; however, remaining ice will dilute the drink and the soda may become flat.
  • If you prefer not to use coconut rum, substitute with white or spiced rum for a different but still delicious flavor.
  • Mini 6 oz. cans of pineapple juice are convenient as 6 oz. equals 3/4 cup, minimizing waste when making small servings.
  • This recipe can easily be doubled or tripled based on the number of guests.
  • Do not add ice until ready to serve to prevent the punch from becoming watered down.
  • Lemon-lime soda can be substituted with ginger ale or lemon-lime sparkling water to suit your taste preference.
  • Simple syrup can be purchased or homemade by dissolving equal parts sugar and water over medium heat without boiling, then cooled and stored refrigerated up to two weeks.
