Egg Rolls
- 12 egg roll wrappers
- 2 tablespoon oil (for cooking)
- Thousand Island dressing (for serving)
Filling
- 500 grams corned beef (approximately 10 slices)
- ½ cup Swiss cheese (or mozzarella cheese, approximately 5 slices)
- ½ cup sauerkraut
Instructions
- Prepare the Filling: Dice the corned beef into bite-sized pieces. Dice or shred the Swiss cheese. In a medium bowl, combine the corned beef, cheese, and sauerkraut, mixing until evenly combined.
- Assemble Egg Rolls: Place 1 to 2 tablespoons of filling in the center of each egg roll wrapper. Dip your finger in water and wet the edges of the wrapper. Fold in two opposite corners to the center, then tightly roll to seal.
- Cook the Egg Rolls (Air Fryer Method): Brush both sides of the egg rolls with oil. Air fry at 400 degrees Fahrenheit for 10 minutes or until golden brown.
- Alternative Cooking (Stovetop Method): Heat oil in a deep pot over medium heat. Fry egg rolls in small batches for 5 minutes or until golden brown.
- Alternative Cooking (Oven Baking Method): Brush egg rolls with oil on both sides. Place on a foil-lined sheet pan or baking rack. Bake at 400 degrees Fahrenheit for 15 minutes, flipping halfway through and brushing with more oil as needed.
- Serve: Allow cooked egg rolls to cool for 3 minutes before serving. Serve with Thousand Island dressing for dipping.
