Instructions

  1. Preheat Oven: Preheat your oven to 350°F and grease a 9x13-inch baking dish with nonstick spray to prevent sticking.
  2. Cook Chorizo: Heat olive oil in a skillet over medium-high heat. Add chorizo and cook, breaking it apart with a spatula, until fully cooked and slightly crispy, about 7-8 minutes. Remove from heat and set aside.
  3. Prepare Egg Mixture: In a large bowl or liquid measuring cup, whisk together eggs, milk, chili powder, dried oregano, salt, and black pepper until smooth. Stir in the drained diced green chiles and set aside.
  4. Layer Ingredients: Spread the frozen potatoes evenly in the prepared baking dish. Top potatoes with cooked chorizo, then sprinkle 1 1/2 cups of grated Colby Jack cheese over the meat.
  5. Pour Egg Mixture: Pour the egg and milk mixture evenly over the layered ingredients in the baking dish, gently spreading it to cover all areas.
  6. Add Remaining Cheese: Sprinkle the remaining 1 cup of Colby Jack cheese on top of the egg mixture to create a cheesy crust.
  7. Bake Casserole: Place the baking dish in the oven and bake until the cheese is melted and the eggs are set, approximately 45 minutes.
