Burger Sauce

Burgers
- 20 to 24 ounces ground beef (90/10)

- 2 teaspoons extra virgin olive oil
- 4 to 8 slices American cheese
- 4 hamburger buns
- Fresh lettuce leaves
- 4 slices tomato

Instructions
- Make the burger sauce: Stir together mayonnaise, ketchup, and pickle relish in a small bowl. Adjust the flavors by adding more ketchup or relish if desired. Set aside.
- Form the burger patties: Divide ground beef into eight 3-ounce loose balls for double-stack burgers. Season the outside of each ball with kosher salt, black pepper, and optional garlic powder.
- Heat and prepare skillet: Preheat a skillet over medium-high heat and add a drizzle of extra virgin olive oil to coat the pan evenly.
- Press patties in skillet: Place each ball into the hot skillet, cover with foil, then press down evenly with a second small pan or skillet to form thin, even patties approximately 1/3 inch thick.
- Cook patties: Cook the patties for 2 minutes on the first side until browned. Flip each patty, place slices of American cheese on top, and cook for another 2 to 3 minutes until cheese melts and patties are cooked through.
- Assemble the burgers: Spread 1 to 2 tablespoons of burger sauce on the bottom half of each bun. Layer with fresh lettuce, one or two cheese-topped patties, sliced tomato, and red onion. Cover with the top bun.
- Serve immediately: Serve the assembled burgers right away while hot and juicy for the best taste and texture experience.
