Description

A delicious and moist strawberry bread recipe featuring finely chopped fresh strawberries in a sweet, tender loaf, topped with a luscious strawberry glaze. Perfect for breakfast, snack, or dessert.

Ingredients

Scale

Bread Ingredients:

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup unsalted butter softened
  • ¾ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • ½ cup milk
  • 1 ½ cups strawberries finely chopped (about 8-10)

Glaze Ingredients:

  • 2 cups powdered sugar
  • 2 Tablespoons melted butter
  • ⅓ cup strawberries finely chopped (about 3-4)
  • ½ tsp vanilla or almond extract
  • 1-2 Tablespoons heavy cream or milk

Instructions

  1. Preheat oven: Preheat the oven to 350 degrees Fahrenheit to ensure it is ready for baking the bread.
  2. Mix dry ingredients: In a medium bowl, combine the all purpose flour, baking powder, and salt. Set this mixture aside for later use.
  3. Cream butter and sugar: In a large mixing bowl, beat the softened unsalted butter and sugar together until the mixture is fluffy and light. Then add in the egg and vanilla extract and continue beating on medium speed for an additional minute.
  4. Add milk and flour: Pour in the milk and add half of the flour mixture; mix for about 30 seconds. Then add the remaining half of the flour mixture. Scrape down the sides of the bowl during mixing to fully incorporate all ingredients into a thick batter.
  5. Fold in strawberries: Stir the finely chopped strawberries into the thick batter to evenly distribute. The batter will become slightly less thick after adding the strawberries.
  6. Prepare pan and bake: Pour the batter into a lightly sprayed or floured bread loaf pan. Place the pan in the oven and bake at 350 degrees Fahrenheit for 50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the bread: Remove the bread from the oven and allow it to cool completely before applying the glaze.
  8. Make the glaze: In a medium bowl, whisk together the powdered sugar, melted butter, vanilla or almond extract, and 1-2 tablespoons of heavy cream or milk until smooth. Stir in the finely chopped strawberries for a fresh strawberry flavor.
  9. Adjust glaze consistency: For a thicker glaze, gradually add additional powdered sugar, ¼ cup at a time, until the desired consistency is reached.
  10. Glaze the bread and serve: Spread or drizzle the glaze evenly over the cooled strawberry bread. Serve and enjoy!

Notes

  • Store leftover strawberry bread in an airtight container or tightly wrapped in plastic wrap to keep it fresh.
  • Leftovers will last for up to 3 days when refrigerated.
  • For dairy-free options, substitute butter with vegan butter and milk with almond or oat milk, and use a plant-based heavy cream alternative for the glaze.
  • Make sure strawberries are finely chopped to prevent large watery pockets in the bread.
  • Use fresh strawberries for the best flavor and texture.
