- Prepare the frosting: In a medium bowl, combine the softened cream cheese, vanilla extract, and powdered sugar. Mix until creamy and smooth.
- Whip the cream: Add the heavy cream to the mixture and beat for 4-5 minutes until thick, smooth, and creamy.
- Prepare the strawberries: Wash the strawberries carefully and pat dry to ensure the frosting sticks well. Remove the stem from each strawberry and cut off about 1/4 from the top to create the smaller cone for Santa’s hat. Set these tops aside.
- Assemble the Santas: Transfer the cream cheese frosting into a piping bag. Pipe the frosting onto the bottom larger part of each strawberry to form Santa’s beard.
- Add the hats: Place the smaller strawberry top pieces on the filled bottom pieces to make Santa’s hat. Optionally, dust powdered sugar over the hats for a snowy effect.
- Decorate details: Use the piping bag to add a white pom-pom on top of each hat and pipe two side swirls to create Santa’s mustache.
- Add the eyes: Place two mini chocolate chips on each strawberry for the eyes.
- Chill and serve: Refrigerate the finished Strawberry Santas until ready to serve for the best taste and appearance.
