Description

A fresh and vibrant Tomato, Cucumber, and Chickpea Salad featuring grape tomatoes, crisp cucumbers, and protein-packed chickpeas tossed in a zesty lemon and cumin dressing. Perfect as a light meal or a side dish that's quick to prepare and full of flavor.

Ingredients

Scale

Salad

  • 2 cups grape tomatoes, sliced
  • 2 cups cucumber, diced
  • 1 15 oz can chickpeas, drained and rinsed
  • 1/2 red onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  1. Combine Salad Ingredients: In a large bowl, toss together the sliced grape tomatoes, diced cucumber, drained and rinsed chickpeas, chopped red onion, and chopped green bell pepper.
  2. Prepare Dressing: In a small bowl or mason jar, whisk or shake together the olive oil, fresh lemon juice, red wine vinegar, minced garlic, cumin, and salt until the dressing is emulsified and well mixed.
  3. Dress the Salad: Pour the dressing over the salad mixture, add the chopped fresh parsley, and toss thoroughly until all ingredients are evenly coated with the dressing.
  4. Let it Marinate: Allow the salad to sit for about 10 minutes, up to an hour if preferred, so the flavors can meld and the vegetables absorb the dressing.
  5. Season and Serve: Taste the salad and add additional salt and pepper if needed. Serve fresh and enjoy this bright, nutritious dish.

Notes

  • For a more robust flavor, let the salad marinate in the refrigerator for up to one hour before serving.
  • You can substitute fresh parsley with cilantro or basil for different flavor profiles.
  • Drain chickpeas thoroughly to avoid excess moisture in the salad.
  • Add a sprinkle of feta cheese or olives for added Mediterranean flair.
  • This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
