Snack Mix
- 2 cups Corn Chex® cereal
- 1 cup mini pretzel twists
- 2 cups Rice Chex® cereal
- 2 cups Honey Nut Cheerios cereal or plain Cheerios
- 1 cup Valentine’s Day M&M’s red, white, and pink
White Chocolate Coating
- 3 1/4 cups white chocolate chips (just under 2 bags)
- 1 1/2 teaspoons vegetable oil or canola oil
Toppings (Optional)
- 1 cup Valentine’s Day M&M’s red, white, and pink
- Valentine’s Day sprinkles
Instructions
- Prepare Pan: Line a large sheet pan with parchment paper and set aside to prevent sticking.
- Combine Snack Mix: In a very large bowl, combine the Corn Chex, mini pretzel twists, Rice Chex, Honey Nut Cheerios, and 1 cup Valentine’s M&M’s. Stir gently to mix all ingredients evenly.
- Melt White Chocolate: In a medium microwave-safe bowl, combine 3 cups of white chocolate chips and the vegetable oil. Microwave for 30 seconds, then stir for 15 seconds. Microwave again for 15 seconds, and stir until the mixture is completely melted and smooth. If needed, continue microwaving in 15-second bursts, stirring each time, until smooth.
- Coat Snack Mix: Pour the melted white chocolate over the snack mix. Working quickly, gently stir to coat all ingredients evenly. Transfer the coated mixture to the prepared sheet pan and spread it into an even layer.
- Add Toppings: Immediately sprinkle the remaining 1 cup of Valentine’s M&M’s and optional Valentine’s Day sprinkles over the top. For extra decoration, melt the remaining 1/4 cup white chocolate chips, place in a small plastic bag, cut off a tip, and drizzle stripes over the snack mix.
- Set and Serve: Allow the white chocolate to firm up at room temperature or place the sheet pan in the refrigerator for 10 to 20 minutes until firm. Once hardened, break into pieces and serve.
